When you think of refreshing cocktail ingredients, yogurt is probably not the first thing that comes to mind. Dairy in beverage form tends to conjure up images of dessert drinks like milkshakes, malts, White Russians, Brandy Alexanders, and/or Grasshoppers.
Dairy doesn’t have to be a super-rich palate coating ingredient though. Yogurt is primed for cocktail inclusion because of its unique properties; it has the fatty qualities of dairy but is also acidic. When used in cocktails, it provides a richness and creaminess but also a tartness which lightens the palate-weight. It can provide extra body to a cocktail but a distinct tang that prevents it from feeling heavy. When you’re thinking about what your cocktail is missing, consider adding a little culture.
