To err is only human and every single one of us makes mistakes. If there were ever a formula for creating a mishap it would be: “Perform a delicate task while under high stress” i.e. bartending. If we can accept the concept of our own imperfection as truth and know that we will inevitably mess something up, we can take steps to prepare for accidents in ways which minimize their damage.

I’m speaking in particular about the order in which we build our cocktails. A good practice to exercise and to teach is building your cocktails in order of ingredients from cheapest to most expensive. If a cocktail is ruined 3 steps into its build and needs to be remade, it’s an easier pill to swallow if you’re only scraping fruit juices and simple syrup than if you’ve ruined the main spirits.
